Lentil salad with cod and vegetables
Time: 40min (+6h of soaking)
Performance: 6 portions
Difficulty: easy
Ingredients:
- 1 1/2 cups (tea) lentils
- 2 cups (tea) of desalted and cooked cod flakes
- 1 cup cherry tomatoes (halved)
- 1 diced red onion
- 1 grated carrot
- Salt, black pepper, chopped parsley and olive oil to taste
- Mimosa lettuce leaves for garnish
Method of preparation:
- Cover the lentils with water and soak for 6 hours.
- Drain, place in a pan with water, add salt and cook for 20 minutes over medium heat or until tender.
- Drain, let cool and transfer to a bowl.
- Mix with cod, tomato, onion, carrot and season with salt, pepper, green perfume and olive oil.
- Line a plate with lettuce leaves, place the salad on top and serve immediately.
