Ingredients:

  • 2 cups peas (dry)
  • 7 cups of water (tea)
  • 2 bay leaves
  • 4 tablespoons of olive oil
  • 600 g of pork ribs cut into pieces
  • 100 g of diced bacon
  • 1 chopped onion
  • 2 minced garlic cloves
  • Diced fried bacon and chopped parsley for dusting

Method of preparation:

  1. Place the peas in a bowl, cover with water and leave to soak for 4 hours.
  2. Drain, put in a pressure cooker together with the water and bay leaf, cover and cook for 25 minutes, after starting the pressure.
  3. Immediately after, turn off, let the pressure go out naturally and open the pan.
  4. In the meantime let it cool and blend half of the peas in the blender until it forms a cream.
  5. Add the peas without beating and set aside.
  6. Place a skillet over medium heat with the olive oil and season the ribs with salt and pepper until browned.
  7. Add the bacon, onion, garlic and saute for 5 minutes.
  8. Add the peas set aside, season with salt and cook for another 10 minutes.
  9. Finally, transfer to a bowl, sprinkle with bacon, parsley and serve immediately.

Ingredients:

  • 500ml of water
  • 1 beef bouillon cube
  • 600 g of frozen peas
  • 1/2 chopped onion
  • 100 g bacon, cut into cubes
  • 100 g of bell peppers, cut into cubes
  • 1 tablespoon of butter
  • Salt, black pepper, green perfume and basil to taste
  • Grated Parmesan and diced fried bacon for sprinkling

Method of preparation:

  1. First, boil the water with the beef stock until it dissolves.
  2. Let it cool and beat this broth with peas in a blender until creamy.
  3. In a skillet, over medium heat, saute the onion, bacon and peppers in butter until golden brown and add the spices.
  4. Finally, add the whipped cream to the blender, mix and cook for 10 minutes.

  • 2 bay leaves
  • 1 cube of vegetable broth
  • 3 tablespoons of olive oil
  • 1 piece of diced Calabrian sausage
  • 1 chopped onion
  • 1 minced garlic clove
  • Salt, chopped parsley and grated nutmeg to taste

Method of preparation:

  1. Cut a lid off the Italian bread and remove the core with a spoon and set aside.
  2. Put the peas in a bowl, cover them with water and let them soak for 4 hours.
  3. Immediately afterwards, drain them and pour them into a pressure cooker.
  4. Add the water, the bay leaf, the vegetable broth and cook for 25 minutes over low heat, after starting the pressure.
  5. Turn off, let the pressure release naturally and open the pan.
  6. Let cool and beat half of the peas in the blender until creamy and reserve.
  7. Heat a frying pan with olive oil over medium heat and fry the peppers until golden brown.
  8. Remove some to decorate.
  9. Add the onion, garlic and fry for another 3 minutes.
  10. Add the beaten peas, beaten peas, salt, nutmeg and cook until boiling.
  11. Pour over the Italian bread, decorate with the reserved peppers, sprinkle with parsley and serve.

Ingredients:

  • 1 cup peas (fresh)
  • 2 cups of water (tea)
  • 2 chopped onions
  • 2 chopped tomatoes
  • 100 g of minced meat
  • 1 tablespoon of oil
  • Salt and pepper to taste
  • Chopped parsley to taste

Method of preparation:

  1. Fry the onion and tomato in the oil together with the meat.
  2. Season with salt and pepper to taste.
  3. In another pan, cook the peas with 1 cup (tea) of water.

  • 1/2 cup mint (chopped)

Method of preparation:

  2. Drain, place in a pressure cooker with the water and bay leaf and cook for 25 minutes after starting the pressure.
