Liver onion

ingredients

  • 500g of liver beef cleaned and cut into strips
  • 1 onion, peeled and cut into half moons
  • Juice of 1/2 lemon
  • 1 tablespoon of water
  • 2 teaspoons of salt
  • olive oil to taste

Method of preparation

In a frying pan, put the olive oil and heat over medium heat. Add the onion and brown it. Transfer the onion to a container and set aside. Drizzle the pan with olive oil again and bring to medium heat. Add the liver and saute for 5 minutes, stirring constantly. Then add the onion and mix well. Season with salt, sprinkle with lemon juice and water. Stir until a thin sauce is formed. Turn off the heat and serve immediately.

Oxtail

ingredients

  • 1 kg of cleaned oxtail
  • 2 onions peeled and chopped
  • 3 cloves of garlic, peeled and crushed
  • 1 red pepper
  • 1 green pepper
  • 340 grams of tomato naked
  • 1 sprig of chopped parsley
  • 1/2 cup vinegar
  • Salt, ground black pepper, cayenne pepper and olive oil to taste
  • water for cooking

Method of preparation

Put the oxtail, the water with the vinegar in a container and mix well. After that, wash in running water, dry and cut into pieces, separating. Season with salt, pepper, peppers and leave to rest for 10 minutes.

In a pressure cooker, add the oil and heat over medium heat. Add the garlic, the onion and brown. Add the peppers and saute until wilted. Add the oxtail, the peeled tomatoes and cover with water. Cover the pan and let cook for 30 minutes after you get the pressure. Then turn off the heat, wait for the pressure to release, open the pan and spray with green odor. Return to medium heat, without covering the pan, until the sauce has reduced. Serve immediately.



Chicken gizzards with gravy

Gizzard chicken with sauce

ingredients

  • 1 kg of gizzard chicken
  • 1 drizzle of olive oil
  • 2 cloves of garlic, peeled and minced
  • 1 peeled and chopped onion
  • 1 chopped green pepper
  • 1 chopped tomato
  • 1 cup of hot water tea
  • 340 g of tomato sauce
  • Salt, paprika, cumin, ground black pepper and parsley to taste

Method of preparation

In a pressure cooker, add the oil and heat over medium heat. Add the onion, garlic, paprika, green pepper and saute for 5 minutes. Add the tomato and mix well. Add the chicken gizzards, salt, cumin, black pepper, water, tomato sauce and mix well. Cover the pan and cook for 30 minutes after taking pressure. Then, turn off the heat, wait for the pressure to ease, open the pan, sprinkle with parsley and serve immediately.
