Doctor recounts experience in book ‘Ultraprocessed People’
British doctor Van Tulleken decided to do an experiment and consume only ultra-processed foods for a month. Skeptical about the hypothesis formulated by Brazilian Carlos Monteiro, who associated excessive consumption of these products with the development of chronic diseases, he decided to do a personal experiment and tell about it in the book “Gente Ultraprocessada”.
“We took risks in this experiment while the benefits remain in the hands of the owners of the companies that produce AUPs, and the results are largely hidden from us, except the effects on our health,” he says in one of the excerpts.
Ultra-processed foods are formulations of ingredients used by the food industry that contain little or no intact food. A very simple way to identify an ultra-processed product is to read the label. Then you will definitely find at least one of these elements:
- Fructose, corn syrup, maltodextrin, dextrose, oils;
- Hydrogenated or interesterified, casein and gluten, some typical examples of food substances that we rarely use in home cooking.

The publication tells the story of how the NOVA Classification, developed by Carlos Monteiro and the Center for Epidemiological Research in Nutrition and Health (Nupens) at the University of São Paulo (USP), gained worldwide recognition and became a fundamental tool for understanding the problems of the current food system. A professor at University College London and an infectious disease specialist, Van Tulleken explores the social, economic and political aspects surrounding the production and consumption of ultra-processed foods.
“My proposal is that, by reading this book, you continue the experiment of eating ultra-processed foods, but do it for yourself, not for the companies that produce them. I can tell you about ultra-processed foods, but the things themselves will be your greatest teacher. Only by consuming them will you understand their true nature. I know this because I did the experiment myself,” says the author.
The book also reveals the mechanisms used by the food industry to create highly addictive products, using chemical additives that are harmful to health. The doctor reveals the secrets behind the formulation of these foods and warns about the health risks associated with their excessive consumption.
“Ultraprocessed People” invites readers to reflect on the eating habits of the population. By sharing his personal experience, Van Tulleken encourages people to question their choices and seek healthier and more sustainable diets.
