The iconic New York salad that harmonizes the crunchiness of apples, the freshness of celery, the strong flavor of walnuts and the lightness of a yogurt-based sauce.

Ingredients for Waldorf Salad:
– 1 1/2 pieces of green apple (or apple)
– 5 seedless grapes, cut in half
– 1 teaspoon(s) of lemon (juice)
– 1 cup(s) of celery
– 1/2 cup(s) coarsely chopped walnuts
Yogurt sauce ingredients:
– 1 jar(s) of natural yogurt
– 1/2 cup(s) of mayonnaise
– salt to taste
Ingredients for serving:
– iceberg lettuce to taste (or romaine lettuce)
– extra virgin olive oil to taste (drizzle)
– salt to taste
PREPARATION:
- If you want to serve this salad as an appetizer, prepare half the recipe.
- In the original recipe the walnuts are all mixed into the salad, in this version we have chosen to add 2/3 of the walnuts to the salad and reserve the rest for decoration.
- If you want to use homemade mayonnaise, start by preparing it. See options Here.
- Separate the ingredients and utensils for the recipe.
- Coarsely chop the walnuts with your hands and, if you prefer, place them in a non-stick pan, place it on a low heat and, stirring, toast lightly: this will allow the walnuts to release all their fragrance in the salad.
- Wash the celery, remove the large filaments and cut it into thin slices.
- Wash the grapes (optional) and cut them in half lengthwise.
- Wash the apples, but do not cut them yet.
- Wash the lettuce and soak it in a sodium hypochlorite solution.
PREPARATION:
Yogurt sauce:
- Place the yogurt in a bowl and beat it with a fork or a whisk until you obtain a smooth mixture.
- Add the mayonnaise and beat again to incorporate.
- Check and adjust the salt.
- Book.
Waldorf Salad:
- Arrange the apples on a cutting board, do not peel them, cut them in half and remove the central part with the cores. Then cut them into regular cubes.
- Transfer them into a bowl, squeeze them directly with the lemon juice to prevent them from oxidizing and mix.
- Add the grapes (optional) and celery and mix again.
- Add nuts: Here you choose to add all or 2/3 of the amount.
- Drizzle with the yogurt sauce and mix gently again.
- Store in the refrigerator until ready to serve.
FINALIZATION AND ASSEMBLY:
- When serving, remove the lettuce from the hypochlorite solution and wash it under running water.
- Dry with paper towels or use a salad spinner.
- Arrange the lettuce around a plate or, if you prefer, directly on the plates.
- Season the lettuce with a little salt and a drizzle of extra virgin olive oil.
- Remove the Waldorf salad from the fridge and distribute in the center of the lettuce.
- Decorate (optional) with the remaining chopped walnuts.
