Light and refreshing dishes with lots of flavor are options to spend the season in a healthy way Paulo Vitor: Rio’s restaurants prepare menus and suggestions for the summer
Once the end-of-year celebrations are over, the attention of the cariocas moves to the summer that is just around the corner. As temperatures rise, our body feels the effects of the heat, which requires greater hydration and a more balanced diet. Rio’s bars and restaurants already offer options for light, healthy and refreshing dishes so that everyone can enjoy the hottest season of the year without compromising on flavours.
At Bao, in Copacabana, chef Kiko Faria has prepared fresh options to accompany summer perfectly. Dishes indicated for the season, also available for delivery, are the black-eyed pea salad with octopus, onions, colored potatoes, cherry tomatoes, marinated peppers, sautéed octopus and fine herbs (R$ 56), and the Ceviche do Bão (R$ $ 43 ), with fish of the day, tiger milk in beer, red onion, tomatoes, Peruvian corn, coriander and chives.
At The View Bar RJ, located on the 30th floor of the Hotel Nacional, in São Conrado, the special summer menu prepared by Italian chef Samuele Oliva features oysters that arrive daily from Cabo Frio to the bar table and are sold at R$ 12 the unit. For a main course, order the Macedonia del Mare salad (R$82), a mix of salmon, tuna and marinated white fish with salted prawns, garnished with raspberries and finished with Sicilian lemon sorbet.
In Botafogo, Bottega Gastrobar has a menu inspired by Mediterranean cuisine, very much in line with the season. There are several options to order, such as seared tuna with cream of peas and mint and a side of banana chips (R$ 39.90) and grilled octopus tentacles, with yogurt sauce and homemade tomato powder (R $42.90)
From Thábata shows that it is possible to eat sweets without feeling so guilty. The house has launched the tart especially for the summer, combining the lavender flower with the freshness of the Sicilian lemon. The novelty can be ordered whole (R$164 for a small and R$269 for a large) or found in slices in the shop window (R$27 per slice), located on the third floor of Shopping da Gávea.
Led by chef Nissei Eric Ueda, the menu at Casa Ueda, at Recreio dos Bandeirantes, offers light dishes such as Tirashi (R$40), an individual bowl with shari (sushi rice), sashimi, egg and a touch of wasabi, and the combo Toshi (R$ 135 – 15 pieces, including special dishes such as roe, scallops, octopus and tomago) and Hiko (R$ 220 – 30 pieces, including scallops, prawns, roe, octopus, tamago, among others). All include different types of fresh fish, selected each day by the chef.
At Alessandro & Frederico’s in Ipanema, the highlight is the grilled fig salad with grana padano chips, parma ham, walnuts with honey and mustard vinaigrette and plantain chips (R$67). Another summer option is the seafood salad with prawns, octopus, squid, mango and shitake in Mediterranean olive oil (R$66).
Meanwhile, Jappa da Quitanda has a special selection on its menu, which in addition to being refreshing and cold, is also low in carbohydrates. Like the Vietnamese Roll (R$41 with 8 units) which is made with rice, avocado, salmon tuna and orange and black massago roe.
There is no shortage of seasonal dishes at Minimok, Eduardo Preciado’s Japanese restaurant. Among the options: the kuro shake, a salmon marinated in soy sauce, herbs, ginger and sesame oil for 48 hours, with a matcha base (R$48). Another option is the Combinado Super (R$138 – 29 units), with 4 salmon sashimi, 4 tuna sashimi, 4 fish of the day sashimi, 3 salmon sushi, 3 tuna sushi, 2 fish of the day sushi , 1 shrimp sushi and 8 hot rolls.
Nusa Café has just launched its summer menu. Starting with the novelty of the bar, the Espresso Martini (R$26), prepared with vodka, kahlua liqueur, espresso and coffee beans. The flagship of the house, the Toasts, are available in two versions: Beneditino Asparagus on Waffle (R$ 40) and Benetinino on Veggie Plate (R$ 32). If you opt for brunch, fish dishes also come out of the kitchen. Like the fettuccine with oyster sauce, fresh mango and shrimp. If you prefer a salad, the grilled salmon with asparagus and quinoa salad with avocado (R$58) is a must.
SEEdZ, in Leblon, has also launched its summer menu. Among the highlights is the Ciabatta Caprese (R$26), which is a gluten-free ciabatta with vegan cheese, pesto, cherry tomatoes and fresh basil. As for meals, one option is the Arab Bowl (R$49) served with mini shitake or mini falafel, accompanied by lentil rice, factoushe salad, hummus, pita bread chips and tahini sauce. Among the light options, Escondidinho (R$28) is prepared with manioc puree and manioc stuffed with lentils, aubergines and courgettes sautéed in tomato sauce.
