Italian chef Davide Tamburella has lost an Australian unfair dismissal claim after being fired from a Brisbane restaurant for refusing to cook pineapple pizza.
Australia's Fair Work Commission rejected the claim brought by Tamburella against his former employer, La Costa Restaurant and Bar, after ruling that the application failed to meet legal requirements and had been lodged out of time.
The dispute began when Tamburella refused to prepare a Hawaiian pizza that was listed on the venue's regular customer menu, Euronews reported. According to findings from the workplace tribunal, the chef explained his refusal by stating that putting pineapple on pizza was an insult to his culture.
The incident in May was the third time in four years that Tamburella had refused to make a Hawaiian pizza in the kitchen. On a previous occasion, he had even asked his manager to check how important it was for Italians not to put pineapple on pizza.
Workplace tensions and dismissal
The confrontation over pizza toppings was not the only friction between Tamburella and restaurant management. The operators of La Costa raised additional concerns regarding his communication style, growing workplace tension, and allegations that the chef had used foul language during his shifts.
Those mounting issues culminated in Tamburella's dismissal from the Fortitude Valley venue in May. Following his sacking, the Italian chef lodged a formal claim with the Fair Work Commission, arguing that his termination was unfair.
The national workplace relations tribunal dismissed the case without upholding his arguments. The commission closed the proceedings after determining that Tamburella's application failed to meet formal standards and had missed the statutory filing deadline.
The global debate over Hawaiian pizza
The clash highlights a long-running culinary conflict between modern commercial pizza variations and traditional Italian culinary customs. Hawaiian pizza, typically made with tomato sauce, mozzarella cheese, sliced ham, and pieces of canned pineapple, has divided diners and chefs across the globe for decades.
The controversial recipe was created in Canada in 1962 by Greek-born restaurateur Sam Panopoulos, who added canned pineapple to a traditional savoury pizza at the Satellite Restaurant in Chatham, Ontario. While the dish became a widespread favourite across Australia, Britain, and the United States, it has met with enduring resistance in Italy.
Italian food culture treats pizza preparation with strict reverence, emphasising simple regional ingredients such as fresh dough, San Marzano tomatoes, buffalo mozzarella, and extra virgin olive oil. Bodies such as the True Neapolitan Pizza Association enforce rigid culinary rules for authentic pizza, and many Italian cooks consider sweet tropical fruit on savoury dough to be culinary sacrilege.
Closure of La Costa Restaurant and Bar
The workplace battle at La Costa took place during the venue's final months of trading. The restaurant and bar permanently shut its doors in July after the lease on the premises expired.
The owner of La Costa explained that the decision to close down was driven by the high costs of running a business in Fortitude Valley. The inner-city Brisbane precinct is known across Queensland for its dense cluster of dining spots, live music venues, and nightlife establishments.
New kitchen role in West End
Under Australian workplace laws, employees challenging a dismissal must lodge an application within a strict 21-day time limit unless exceptional circumstances can be demonstrated. With the Fair Work Commission closing the case due to the late submission, the legal battle over the menu item has reached a definitive end.
Tamburella has since secured a new culinary position in the city. According to his professional profile on LinkedIn, the chef is now working in the kitchen at Don Gino, an Italian restaurant located in the West End neighbourhood of Brisbane.
The West End district, situated across the Brisbane River, is celebrated for its eclectic hospitality scene, independent cafes, and traditional European dining venues.
