Corn Cake:
- 400 g of shelled green corn cobs (about 4 medium ears)
- 1 can of condensed milk
- 4 small eggs, if you use large ones, reduce the quantity by 25%.
- 1 teaspoon(s) baking powder
To grease the form:
- 1 tablespoon(s) of unsalted butter
- 1 tablespoon of granulated sugar
PRE-PREPARATION:
- For a large recipe like the one in the photo, adjust the recipe quantities for 8 people and use a 23-25 cm diameter mold.
- Assemble the ingredients and utensils for the recipe. For large eggs, reduce the amount by 25%.
- Heat the oven to 160°C.
- Skin the corn cobs, cutting the kernels very close to the cob with a knife. No need to cook.
- Grease the mold with butter and sprinkle with sugar, leaving a very even layer.
PREPARATION:
Corn cake:
- Beat the corn, condensed milk and eggs in a blender until a smooth homogeneous mass is obtained.
- Add the baking soda, mix well or quickly activate the pulsar function.
- Transfer the dough to the form greased with butter and sprinkled with sugar.
- Bake in a preheated oven at 160°C for about 30 minutes.
- Before turning off the oven, insert a toothpick into the cake to check the tip. If it comes out dirty with pasta, let it cook a little longer.
FINISHING AND ASSEMBLY:
- Once out of the oven, take the cake out of the oven, let it cool for about 15 minutes and turn it out onto a plate.
- Cut into slices and serve.
