Tuna Sausage Ingredients:
– 2 cans solid canned tuna (can be grated), drained
– 1 1/2 cups cabbage, thinly sliced
– 1 cup(s) red cabbage, thinly sliced
– 1 cup(s) of grated carrot
– 2 tablespoons chopped onion (or red onion)
– 2 celery stalks of about 10 cm each, thinly sliced
Yogurt sauce and mayonnaise ingredients:
– 1 cup(s) of natural yogurt (170 g each)
– 1/2 cup(s) of mayonnaise
– 1 tablespoon(s) of extra virgin olive oil
– chopped parsley to taste
– green onion chopped to taste
– 1/2 unit of finger-de-moça pepper, seedless, chopped
– salt to taste (optional)
– pepper to taste THE
Ingredients TO COMPLETE:
– potatoes with straw to taste
PREPARATION:
- Separate the ingredients and utensils for the recipe.
- Cut the white and red cabbage into thin strips, place them in a colander and wash them under running water. Set it aside in a colander to drain well.
- Wash and peel the carrot, grate it on the medium side of the grater.
- Peel the onion and chop it.
- Wash the celery and cut it into thin slices.
- Wash the pepper, remove the seeds and chop it.
- Wash the parsley and spring onion and chop them. Book on absorbent paper.
- Open the cans of tuna and drain it. If using solid tuna, place it in a bowl and break it up a bit.
PREPARATION:
Yogurt and mayonnaise sauce:
- Place the yogurt and mayonnaise in a bowl and beat, preferably with a wire whisk, until you obtain a very smooth and homogeneous mixture.
- Add the extra virgin olive oil and mix.
- Add the chilli pepper, parsley and chopped spring onion and mix again.
- Season with salt and pepper and set aside.
Tuna sausage:
- Dry the cabbage (white and purple) with absorbent paper and place it in a bowl large enough to add all the other ingredients.
- Add the grated carrot, chopped onion and sliced celery and mix.
- Add the tuna, yogurt sauce and mayonnaise and mix carefully to combine.
- Place the salpicão in the refrigerator and let it rest to blend the flavors for about half an hour before serving.
FINALIZATION AND ASSEMBLY:
- Take the tuna sausage from the fridge and arrange it on a serving plate or, if you prefer, distribute it among the plates.
- Finish by spreading a little potato on top.
- Bring the remaining straw potatoes to the table to accompany them.
