Recipe for chicken fillet with 4 cheese sauce

Ingredients:

  • 4 chicken breast fillets (about 800 g)
  • 2 tablespoons butter
  • Fresh basil leaves for sprinkling

Sauce

  • 2 tablespoons butter
  • 1 tablespoon wheat flour
  • 1 cup milk (tea)
  • 1/2 cup grated mozzarella
  • 1/3 cup grated cheese
  • 4 tablespoons cream cheese
  • 2 tablespoons grated parmesan
  • Salt, black pepper and grated nutmeg to taste

Preparation method

  1. For the sauce, melt the butter in a pan and sprinkle with the wheat flour.
  2. Fry for 2 minutes, stirring.
  3. Pour in the milk, little at a time, stirring until it thickens.
  4. Add the mozzarella, cheese and ricotta, stirring until melted.
  5. Remove from the heat and stir in the parmesan.
  6. Season with salt, pepper and nutmeg and set aside.
  7. For the chicken, season the proteins with salt and pepper.
  8. Heat a pan with butter and brown the fillets for 3 minutes on each side, or until lightly browned.
  9. Transfer to a serving plate, pour the sauce over, sprinkle with basil and serve.
