And now that 2023 is coming to an end, it’s time to meet some of them different dishes with this ingredient it will be a hit at dinner parties. Check out some cod recipe options below and choose your favorites to try this Christmas and New Year:
Special cod with vegetables
Time: 1 hour (+24 hours soaking)
Performance: 5 servings
Difficulty: easy
Ingredients:
- 1 kg cod fillet
- 1 pack of puff pastry (400g)
- Olive oil for basting and seasoning
- 1 yellow pepper sliced
- 1 sliced green pepper
- 2 onion strips
- 200 g of cherry tomatoes cut in half
- 1 cup broccoli florets
- 1/2 cup chopped green chili pepper
- Salt and white pepper to taste
- Green olive to decorate
Preparation method:
Place the cod in a bowl, cover with water and leave to macerate in the refrigerator for 24 hours, changing the water 6 times during this period. Drain them, cook them in boiling water for 5 minutes and let them cool. Break the cod into large pieces, removing the skin and bones.
Line the bottom of a greased medium baking dish with the mixture and place the cod in it. Distribute the peppers, onion, cherry tomatoes, broccoli, season with green chilli, salt and pepper. Drizzle with olive oil and place in a preheated medium oven for 25 minutes or until the vegetables are cooked and golden. Decorate with olives and serve.
Strawberry cod
Time: 2 hours
Performance: 8 servings

Ingredients:
- 1 medium strawberry
- Oil for anointing
- 4 tablespoons butter
- 1 onion chopped
- 2 cloves garlic, minced
- 1 can of chopped peeled tomatoes
- 2 shrimp bouillon cubes
- 1kg of desalted cod, cooked and chopped
- 1kg of cleaned shrimps
- 1 tablespoon wheat flour
- 1 cup and 1/2 cup cream (tea).
- Salt, black pepper and chopped parsley to taste
- 3 cups cream cheese
Preparation method:
Cut the lid off the strawberry, remove all the seeds from the core and grease it with oil both inside and outside. Wrap in aluminum foil, place on a baking tray and bake in a preheated medium oven for 1 hour. Let cool.
In a pan, melt the butter over medium heat and fry the onion and garlic for 3 minutes. Add the tomato, the prawn broth and fry for 5 minutes. Add the cod, prawns and fry for 3 minutes. Add the flour dissolved in the cream and mix until it boils.
Season with salt, pepper and parsley. Stir in 1 cup cream cheese and set aside. Spread the remaining cream cheese all over the strawberry to the edge. Pour in the hot cream, sprinkle with parsley and serve.
Cod fricassee
Time: 1 hour (+24 hours soaking)
Performance: 6 servings

Ingredients:
- 700g of cod flakes
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 diced onion
- 3 cloves garlic, minced
- 1 diced carrot
- 1/2 cup sliced mushrooms
- 1 can drained corn
- 1 can of cream (300 g)
- 1/2 cup (tea) water
- 1/3 cup chopped olives
- Salt and black pepper to taste
- 1 cup potato straw
- Chopped parsley for sprinkling
Preparation method:
Leave the cod to soak for 24 hours in a bowl full of water in the refrigerator. Change the water 3 or 4 times. Heat a pan with the olive oil and butter over medium heat, sauté the onion and garlic for 3 minutes or until softened.
Add the cod and brown over low heat for 10 minutes, stirring occasionally. Add the carrot, mushrooms, corn and water. Cook for 10 minutes or until the water dries up. Mix the cream, olives, season with salt and pepper. Pour into a refractory dish and cover with mozzarella.
Bake in a preheated medium oven for 20 minutes. Cover with straw potatoes, sprinkle with parsley and serve with white rice.
Cod medallion
Time: 30 minutes (+10 hours soaking)
Performance: 4 servings

Ingredients:
- 500g of diced cod
- Salt and oregano to taste
- 200 g of sliced bacon
- Fry oil
- Lettuce leaves to decorate
Preparation method:
Place the cod in a bowl, cover it with water and leave it to soak for 10 hours, changing the water 3 times. Drain and season with salt and oregano. Wrap the cod cubes in the bacon slices and secure them with toothpicks. Fry, little by little, in boiling oil, until golden. Drain on absorbent paper and garnish with lettuce. Serve.
Cod with passion fruit sauce
Time: 1 hour
Performance: 4 servings

Ingredients:
- 4 desalted cod fillets
- 1/2 cup milk (tea).
- 2 tablespoons butter
Sauce
- 1 tablespoon butter
- Pulp of 1 passion fruit
- 1 teaspoon of sugar
- 1/3 cup (tea) water
- 1 teaspoon corn starch
- 1/2 cup cream (tea).
- 2 tablespoons cream cheese
- Salt and white pepper to taste
- Chopped cashews to taste for sprinkling
Rice
- 2 tablespoons of oil
- 1 onion chopped
- 2 cups rice, washed and drained
- 1/2 cup (tea) shredded coconut
- 1 cup coconut milk (tea)
- 3 cups (tea) boiling water
- Salt and chopped parsley to taste
Preparation method:
Place the cod in a pan, add the milk and cover with water. Cook over medium heat until boiling. Drain and reserve. For the sauce, in a pan, mix the butter, pulp, sugar, water and cornstarch. Cook over medium heat, stirring until thickened slightly. Add the cream, cream cheese, season with salt and pepper and set aside.
For the rice, in a pan, heat the oil over medium heat and fry the onion until softened. Add the rice, the grated coconut and fry for 2 minutes. Add the coconut milk, water, season with salt and lower the heat once it boils. Cook until the water dries up, mix in the parsley and set aside.
In a non-stick pan, melt the butter over high heat and brown the cod fillets. Arrange on a serving plate, drizzle with the sauce, sprinkle with chestnuts and serve immediately, accompanied by rice.
