Ingredients:
- 100 g of 70% cocoa chocolate.
- 100 g of 56% cocoa chocolate
- 115g melted unsalted butter
- 60 g of refined sugar
- 100 g of cane sugar
- 3 large eggs at room temperature
- 1 teaspoon vanilla essence
- 110 g of wheat flour
- 1 pinch of salt
- 15 g of cocoa powder
- Cocoa nibs (to taste)
Preparation method:
Preheat the oven to 170º. Line a 20cm x 25cm baking tray with baking paper (false bottom). Chop the chocolate bars and melt them in a bain-marie. Add the butter, mix well and set aside.
In another container, mix the sugars, eggs and vanilla. Add to the melted chocolate and butter. Mix gently. Add the sifted flour, salt, cocoa powder and mix slowly. Pour the mixture into the lined pan and sprinkle the nibs over the mixture. Cook for 25-30 minutes.
Comments:
– To keep the center moist, always cook the brownie at a low temperature, between 170º and 180º.
– Once the brownie is out of the oven, place it in the freezer for 10-15 minutes. This will prevent it from cooking, favoring its creaminess.
– After 20 minutes in the oven, check the cooking of the dough by inserting a toothpick. It should come out damp, but not completely dirty. This is the correct brownie point. If it comes out clean the recipe becomes a cake!
– Always use good quality chocolate.
