Ingredients Homemade mayonnaise with boiled egg (variation):
– 6 hard boiled eggs
– vinegar to taste for cooking eggs THE
– 2 tablespoons lemon juice (or lemon)
– 2/3 cup(s) of olive oil (or oil)
– Salt to taste
– pepper to taste THE
Tartar sauce ingredients:
– 1 cup(s) of homemade mayonnaise (see recipe)
– 2 large cucumbers, cut into very small cubes
– 2 teaspoons of capers, chopped
– 1 tablespoon(s) of lemon (juice)
– 1 tablespoon(s) of parsley
– Salt to taste
– pepper to taste THE
PREPARATION:
- Start by cooking the eggs (see preparation)
- Separate other ingredients and utensils from the recipe.
- Wash the lemon and squeeze the juice for the mayonnaise and tartar sauce.
- On a cutting board, cut the pickled cucumber into cubes: first cut thin slices lengthwise (about 5 per unit) and then cut each slice into cubes.
- Place the capers in a colander and wash them to remove some of the salt, chop them and measure the quantity needed for the recipe.
- Wash, dry and chop the parsley and set it aside on absorbent paper.
PREPARATION:
Eggs – Cooking (do this step before starting pre-preparation):
- Place the eggs in a pan, cover them with cold water and add a few drops of vinegar.
- Place over high heat and when boiling, reduce heat to medium and cook for 8-10 minutes.
- Turn off the heat, drain and cover with cold or ice water to cool.
- Continue pre-preparation (step 2).
Homemade boiled egg mayonnaise:
- Shell the eggs and, on a cutting board, chop them coarsely.
- Add the chopped eggs to the blender jug ​​and add the remaining mayonnaise ingredients (lemon juice, olive oil, salt and pepper).
- Beat until you obtain a homogeneous mixture: stop and scrape the sides of the glass as many times as necessary so that all the ingredients are well blended.
- If the mayonnaise has not yet solidified, open the center cap and add a little more olive oil or oil in a drizzle until the mayonnaise is firm: the amount of olive oil or oil may vary depending on the size of the eggs you are using.
Tartar sauce:
- Place the homemade mayonnaise in a bowl (see quantities in the ingredients), add the lemon juice, cucumber cubes and chopped capers and stir to combine.
- Add the chopped parsley and mix again.
- Season with salt and pepper.
- Cover the bowl with PVC film and refrigerate until ready to serve.
FINALIZATION AND ASSEMBLY:
- Download the Tartar sauce in the serving bowl.
- In addition to accompanying fish dishes, it can be used with cured meats, chicken and other recipes, or to make a sandwich.
- Keep refrigerated.
