Courgette carbonara linguine
Yield: 2 servings
ingredients
- 160 g linguine
- 70 g of courgette strips
- 3 egg yolks
- 60g Pecorino Romano
- 20 ml of extra virgin olive oil
- mint leaves
- Salt and black pepper to taste
Preparation method
In a bowl mix the egg yolks, 1/3 of the grated pecorino, salt and black pepper. Reserve. Heat the pan with a drizzle of oil and grill the courgettes cut into strips. Meanwhile, cook the pasta in boiling salted water for the time indicated on the package. Drain them and add the grilled courgettes. Add two tablespoons of cooking water to the courgette pasta and stir for another 30 seconds. Turn off the heat and add the egg yolk cream, mixing vigorously. Complete with the remaining grated pecorino and freshly ground black pepper.
Chef’s tip: A perfect carbonara is creamy and free from lumps of coagulated or raw egg yolks. To avoid these errors, add the egg yolk cream to the pan off the heat.
