In Brazil it is a great opportunity to gather the whole family and have a delicious lunch. With this in mind, nutritionist Andréia Camilla, who works for GetNinjas, a rental service application, lists some delicious examples of dishes that will please mothers on this day. Watch!

Chicken nuggets with sweet potato puree




ingredients

  • 1/2 kg sweet potatoes, chopped and cooked with salt
  • 1 egg yolk
  • 1 tablespoon clarified butter
  • 1 chicken breast cooked and cut into strips
  • 3 cloves of garlic, peeled and chopped
  • 1/2 onion peeled and chopped
  • 1 1/2 cups golden flaxseed meal
  • 1/2 kg of snow peas
  • 1 beaten egg
  • Salt, olive oil, nutmeg and ground black pepper to taste
  • Fry oil
  • Clarified butter for browning the snow peas

Preparation method

Place the sweet potato in a container and, using a fork, mash it. Add the egg yolk and butter and mix. Season with salt, black pepper and nutmeg. Reserve. In a pan, add the olive oil and place over medium heat to heat. Add the onion and garlic. Add the chicken and brown until golden brown. Turn off the heat, wait for it to cool and add the mixture with the sweet potato puree.

With the help of a spoon, take small portions of dough, form croquettes and dip them in the beaten egg flaxseed flour. In a pan, add the oil and place over medium heat to heat. Gradually, roll out the croquettes and fry them until golden brown. Reserve. In another pan, add butter and place over medium heat to heat. Add the snow peas and brown them for 3 minutes. Turn off the heat and serve the croquettes with the sweet peas.

  • 2 onions peeled and cut into cubes

  • 1 cup gluten-free flour mix (1/2 cup rice flour, 3 tablespoons potato starch, and 1 tablespoon sweet cassava flour)
  • 1 teaspoon dried chilli
  • 1 cup chopped chives
  • 1 teaspoon oregano
  • 1 tablespoon of soup chemical baking powder
  • 1/2 cup flaxseed meal
  • 200 g of seasoned tofu
  • 5 cherry tomatoes Sweet cut in half
  • Salt and ground black pepper to taste
  • Butter for greasing
  • Flaxseed flour for flouring and dusting

Preparation method

Place the courgettes, carrots, onions and garlic cloves in a container and mix. Season with salt, black pepper,peppers, chives and oregano. Add the egg and flour mix and mix. Preparation method

In a pan, add coconut oil and place over medium heat to heat through. Using a knife, cut off the top of the apple and place it face down in the pan to soften.
