  • 3 tablespoons of drained green corn
  • 4 tablespoons of coconut milk
  • 1 egg
  • 4 tablespoons of oil
  • 4 tablespoons of sugar
  • 4 tablespoons of corn flour
  • 1 teaspoon (coffee) of baking powder
  • 1/2 cup (tea) of condensed milk
  • grated coconut to decorate

Method of preparation

In the blender, whisk the corn, coconut milk, egg, oil, sugar, cornmeal and baking powder until blended. Pour into microwave-safe mugs, leaving some space around the edge.
