Ingredients Red Cabbage Salad with Cranberries

– 2 cups red cabbage, cut into thin strips

– 1/4 carrot(s), coarsely grated

– 1/4 cup(s) dried cranberries THE

– 2 tablespoons chopped green onion

– 2 tablespoons chopped coriander

Yogurt and Lemon Sauce Ingredients

– 120 ml of natural yogurt

– 1 1/2 tablespoons extra virgin olive oil

– 1/2 unit finger-de-moça pepper, seeded, chopped

– 1/2 unit of lemon (juice and zest)

– Salt to taste

– pepper to taste THE

Ingredients for decoration

– 2 tablespoons of Brazil nuts (or walnuts), roughly chopped

PREPARATION:

  1. Wash, cut and squeeze the lemon and peel it.
  2. Wash the red cabbage, cut it into thin strips and set it aside in a bowl with a sodium hypochlorite solution.
  3. Wash, peel and grate the carrot on the coarse part of the grater.
  4. Wash, remove the seeds and chop the chilli pepper.
  5. Wash, dry and chop the spring onion and coriander.
  6. Finally, roughly chop the Brazil nuts or walnuts.

PREPARATION:

Red Cabbage Salad with Cranberries:

  1. Remove the red cabbage from the hypochlorite solution, drain it with a colander and wash it under running water, drain it again and dry it with absorbent paper.
  2. Place the cabbage in a bowl and add the grated carrot, chopped cranberry, green onion and cilantro. Reserve.

Yogurt and Lemon Sauce:

  1. In another bowl, mix together the plain yogurt, olive oil, chopped chili pepper, lemon zest and juice, salt and pepper.
  2. Dress the red cabbage salad with the lemon yogurt dressing.
  3. Mix well so that all the ingredients are well combined.
  4. Adjust the salt if necessary.

FINALIZATION AND ASSEMBLY:

  1. Place the salad in a bowl or, if you prefer, divide it between plates next to the main course.
  2. Decorate the Cabbage Salad with Brazil nuts or chopped walnuts.
  3. This salad makes a great side dish, but is also delicious served as a main course.
