Stuffed Potato Gratin

Ingredients:
- 4 large potatoes washed and dried
Filling
- 2 tablespoons of cream
- 2 tablespoons grated parmesan cheese
- 1 tablespoon butter
- 2 tablespoons grated mozzarella
- 2 tablespoons of chopped salami
- Salt and black pepper to taste
- 1 tablespoon chopped parsley
Coverage
- 1 egg lightly beaten
- 4 tablespoons grated parmesan cheese
Preparation method:
- Wrap the potatoes, one by one, in aluminum foil and bake in a preheated medium oven for 20 minutes or until soft, but not mushy.
- Remove from the oven, unwrap, cut in half lengthwise and, using a spoon, make a hole in the potato so that it looks like a boat.
- In a bowl, mix the pulp removed from the potatoes with the cream, parmesan, butter, mozzarella, salami, salt, pepper and parsley.
- Place the stuffed potatoes in a baking dish, brush them with the beaten egg and sprinkle with the parmesan.
- Bake in a preheated medium oven for 10 minutes or until lightly browned. Serve then.
