Chicken fricassee in courgettes

Ingredients:

  • 2 Italian courgettes
  • 2 cups grated mozzarella
  • Straw potatoes for dusting

Braised:

  • 2 tablespoons butter
  • 2 chicken breasts cooked and minced
  • 1 can of drained corn
  • 1/2 can tomato sauce
  • 1 cup cream cheese
  • Salt and chopped green chili pepper to taste

Preparation method:

  1. Cut the courgettes in half lengthwise.
  2. Cook the courgettes in boiling water for 5 minutes. Drain and let cool.
