Chef Lisandro Lauretti gave some “golden advice” on his Instagram for those who are still undecided about which one to choose: look at the color of the pasta. According to him, the secret is not to buy the most expensive product. To set an example, she selected as her favorite a Barbie doll-themed product from the location she visited.
“Durum wheat pastas are the most beautiful, they have a higher protein content, therefore they have more consistency in the mouth, they are tastier. Most Italian pastas are made from durum wheat. There are the more industrial ones, they go through a process fast drying, with high temperatures this stresses the dough and then takes on a darker yellow tone”, he explains.
The expert says that this dark color is the most common in famous brands. He showed an industrial pulp product made with a “decent drying process” and showed that the color is different, more muted.
“Definitely between this and that, this.” He then showed a package of pasta from the Italian brand Di Martino with a pink Barbie package, which had a promotional price of R $ 10.89.
“This pasta from Gragnano, which is the best region that produces this product in Italy, is here on the shelf, practically at the same price as the high-volume industrial one. This is definitely the best deal in this market. It is even certified,” he explained.
“It’s okay that it came with the Barbie packaging, maybe that’s why people don’t buy it. But if you know that Gragnano produces the best durum wheat pasta, you’ll know that here you have a product infinitely better than that standardized industrial product that makes really makes the difference. Today I have already made my choice: Barbie dough”, he concluded.
