Meatloaf with aubergines

Time: 50 minutes

Ingredients:

  • 2 tablespoons of olive oil
  • 1 grated carrot
  • Salt, black pepper and chopped green chilli to taste
  • 1.2 kg of minced meat
  • 1 egg
  • 3 tablespoons of breadcrumbs
  • Olive oil for greasing and brushing
  • 1 cup shredded mozzarella
  • 1 cup (tea) of Catupiry®

Preparation method:

  1. Heat a pan with olive oil over medium heat and fry the onion until softened.
  2. Add carrot, salt, pepper, green chillies and sauté for 2 minutes.
  3. Transfer it to a bowl, let it cool and mix it with the meat, egg, breadcrumbs and salt until you obtain a smooth mixture.
  4. In a greased medium English cake pan, arrange some of the aubergine slices, covering the entire pan.
  5. Spread half the meat on top and spread the cheese and Catupiry® on top.
  6. Cover with the remaining meat and the remaining aubergine slices.
  7. Brush with olive oil and bake in a preheated medium oven for 35 minutes or until golden brown.
  8. Unmold and serve.
