Courgette galette: a different way to prepare the savory pie

Since its creation during the reign of Louis XIV, the famous Sun King, the dish has morphed into countless sweet and savory versions. Therefore, what remains in current recipes is the shape that resembles a crown.

Courgette galette

Time: 1h10 (+30min in the fridge)

Performance: 8 servings

Difficulty: easy

Ingredients:

  • 1 cup and 1/4 cup (tea) wheat flour
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into cubes
  • 2 tablespoons margarine
  • 4 tablespoons ice water
  • Wheat flour for dusting

Filling

  • 3 tablespoons margarine
  • 50 g of grated parmesan
  • 3 diced Italian courgettes

Preparation method:

  1. In a bowl, mix the flour, salt, butter and margarine, working with your fingertips until you get a crumb-like consistency.
  2. Add the ice water, little by little, stirring quickly to combine. Tip: Don’t overwork the dough.
  3. Wrap in cling film and refrigerate for 30 minutes.
  4. Using a rolling pin, roll out the dough on a lightly floured surface until it forms a disk approximately 30cm in diameter.
  5. Line a 22cm diameter springform pan with removable bottom.
  6. Leave a 5cm border, spread half the margarine in the center and sides, sprinkle half the cheese, place the courgettes and sprinkle with the remaining cheese, salt and pepper to taste.
  7. Arrange pieces of the remaining margarine on the cake.
  8. Bake in a preheated medium oven for 40 minutes or until golden brown.
  9. Remove from the oven and transfer to a serving plate.
  10. Unmold and serve immediately.
