Caramelized Pineapple Ingredients:
– 1 unit pineapple, medium, sliced or enough to cover the bottom of the pan
– 75 g of unsalted butter (see recipe)
– 1/2 cup(s) of sugar
Ingredients for the yogurt cake:
– 75 g of unsalted butter, at room temperature
– 5 spoon(s) of sugar
– 3 units of eggs (separated whites and yolks)
– 1 pot(s) of natural yoghurt (1 170g pot) (or fresh curd)
– lemon to taste (zest)
– 1 teaspoon(s) of vanilla essence
– 1 1/2 cups wheat flour, sifted.
– 1 teaspoon(s) of chemical baking powder
Ingredients TO SERVE (OPTIONAL):
– ice cream of your choice (optional) (or other ice cream of your choice)
Ingredients TO COMPLETE:
– unsalted butter to taste, melted and brushed (optional)
PREPARATION:
- This cake is best prepared the same day it will be served (a few hours before).
- Separate the utensils and ingredients for the recipe.
- Grease a 25cm round non-stick pan with butter for a whole recipe, corresponding to 4 portions. If your pan is not non-stick, make sure it is very well greased.
- Remove the butter (the amount you will need in the dough) from the refrigerator.
- Preheat the oven to 180°C.
- Peel and cut the pineapple into uniform slices 1.0 cm thick. Then cut them in half and set them aside.
PREPARATION:
Pineapple cake (fruit caramelization):
- Place ⅔ of the butter in a cold pan, place it on a low heat and let it melt, being careful not to burn it.
- Add half the sugar and cook until it melts and turns amber in color. Lift the syrup with a spatula and check if it runs: it’s the right point.
- Transfer the syrup into the mold and spread it over the entire bottom.
- Arrange the pineapple slices in the greased non-stick pan, try to cover them as much as possible, if necessary cut the pineapple into small pieces so that the entire bottom is covered by the fruit.
- Sprinkle the other half of the sugar over the pineapple slices, with the remaining butter, divided into small portions.
- Bake in the oven for 20-30 minutes or as long as it takes for the slices to be soft and caramelized.
- While the pineapple is cooking, prepare the cake batter.
Pineapple cake dough:
- Separate the yolks and whites.
- Sift the flour. Book.
- Using a mixer, beat the butter with the sugar until it forms a soft cream.
- Add the egg yolks one at a time and continue beating.
- Then add yogurt or curd, lemon zest and vanilla essence.
- Check how the pineapple is in the oven, being careful not to burn the caramel.
- Continue with the next steps of preparing the dough when the pineapple is almost ready.
- Next, mix the sifted wheat flour with the cream in the mixer, without whisking.
- In another bowl, beat the egg whites until stiff peaks form.
- Add the yeast to the dough and mix.
- Add the egg whites to the cake mixture, mixing without beating, with movements from top to bottom so that everything mixes, without removing the air from the egg whites.
Final assembly:
- Check that the pineapple is toasted and caramelised: it should be softer and golden and the caramel should be light in colour.
- Pour the cake batter over the slices.
- Tap the pan lightly against the counter to level and stretch the dough.
- Place back in the preheated oven and cook for about 30 minutes.
- After this time, check if it is well cooked by doing the toothpick test. If necessary, increase the oven time until the dough is completely cooked.
- When it is completely cooked, take it out of the oven, let it cool for 5 minutes, remove it, if necessary, and remove it from the mold while it is still hot, turning it upside down onto a serving plate.
FINALIZATION AND ASSEMBLY:
- Serve the pineapple cakepreferably on the same day as preparation.
- If you wish, heat the cake a little, accompany it with ice cream or other ice cream of your choice.
- When ready to serve, brush a little melted butter (optional) on the pineapple slices (on top of the cake) so that they are shiny.
