The Caesar Salad: light, healthy and practical, with chopped chicken and natural yogurt-based dressing (without raw eggs or mayonnaise)

Basic ingredients for Caesar salad:

– 1/2 bunch of iceberg lettuce, washed and roughly chopped. (or romaine lettuce)

– salt to taste (pinch) to season the leaves

Ingredients for cooking chicken:

– 150 g of chicken breast

– 1/4 unit of lemon

– salt to taste

– pepper to taste

– 1 unit(s) of laurel

– boiling water to taste – enough to cover the chicken

– olive oil to taste

Crostini ingredients:

– 2 slice(s) of sliced ​​bread, cut into cubes

– olive oil to taste

– salt to taste (pinch)

– dried aromatic herbs to taste (optional)

Healthy Caesar Dressing Ingredients:

– 1 canned anchovy fillet, chopped

– 1 small clove of garlic, grated or finely chopped

– Sicilian lemon to taste (zest) (or lemon)

– 2 and 1/2 tablespoons of extra virgin olive oil

– 1/2 jar(s) of low-fat yogurt

– 1 teaspoon Dijon mustard (or mustard)

– 1 tablespoon(s) of grated parmesan.

– salt to taste

– pepper to taste

Ingredients TO ACCOMPANY:

– Parmesan to taste (chips)

– pepper to taste

PREPARATION:

  1. Set aside everything you need for the recipe.
  2. Bring enough water to a boil to cook the chicken.
  3. Wash the leaves well under running water and immerse them in the sodium hypochlorite solution while preparing the other ingredients.

PREPARATION:

Chicken cooked and cut into pieces:

  1. Season the chicken breast with lemon juice, salt and pepper.
  2. Separate the crushed garlic clove, bay leaf and boiling water.
  3. Heat the pressure cooker over medium-high heat and add a drizzle of olive oil.
  4. Add seasoned chicken, crushed garlic, bay leaf and prepared boiling water.
  5. Cover the pan, heat over high heat until it comes to pressure, then reduce the heat and cook for 15-20 minutes.

Toast:

  1. Remove the crust from the bread (optional) and cut it into 1 to 1.5 cm cubes.
  2. Season with salt, dried herbs (optional) and a drizzle of olive oil. Book.
  3. Grease a pan with olive oil and heat it lightly over low heat.
  4. Add the bread cubes and brown it on all sides, stirring to prevent it from burning.
  5. Remove and place on paper towels to drain. Book.

Light Caesar sauce – WITHOUT RAW EGG AND MAYONNAISE:

  1. In a bowl, mix the natural yogurt, the chopped anchovy fillet, the grated garlic and the lemon zest.
  2. Add the Dijon mustard and mix well.
  3. Beat with a wire whisk, adding the extra virgin olive oil little by little, until a creamy sauce forms.
  4. Add the grated parmesan and season with salt and pepper. Book.

Chicken (continued):

  1. Once the estimated time has passed, remove the pressure from the pan, open and remove the garlic and bay leaves.
  2. Transfer the chicken to a plate and, while it is still hot, shred it with two forks. Book.
  3. Allow the grated chicken to cool, refrigerate for 15-30 minutes.

Assemble the Healthy Caesar Salad:

  1. Rinse the lettuce leaves and dry them well with a salad spinner.
  2. If necessary, pat dry with paper towels to remove moisture.
  3. Place the sanitized and dried leaves in a bowl.
  4. Season with a pinch of salt and delicately incorporate half of the prepared sauce into the leaves.
  5. Transfer to a plate or divide between individual plates.
  6. Spread the shredded chicken over the leaves.
  7. Drizzle with the rest of the sauce.
  8. Spread over the croutons.
  9. Top with parmesan flakes and black pepper.

FINALIZATION AND ASSEMBLY:

  1. Serve to healthy Caesar salad, without eggs and mayonnaise immediately, to preserve the freshness of the leaves and the crunchiness of the croutons.
  2. For a different presentation, serve in individual bowls or mound directly onto plates
