A very tasty, easy and quick traditional Portuguese recipe.

Cod Salad with Chickpeas Ingredients:
– 600 g of cooked cod (or leftover cod)
– 500 g of pre-cooked chickpeas (or canned chickpeas) w
– 2 cup(s) of extra virgin olive oil
– 2 tomatoes, without seeds, cut into cubes
– 2 onions cut into slices or half-moons
– 2 units of finger-de-moça peppers, without seeds
– 8 pitted black olives, sliced (optional) (or pitted green olives)
– 2 teaspoons of vinegar w
– salt to taste
– pepper to taste w
– paprika to taste w
Ingredients To decorate:
– 2 eggs, boiled and chopped
– vinegar to taste w
– parsley to taste, chopped
– pink peppercorns to taste (optional) w
Ingredients To accompany (optional):
– green leaves to taste (optional)
-olive oil to taste (optional)
– salt to taste (optional)
– pepper to taste (optional) w
PREPARATION:
1. Separate all the ingredients and utensils for the recipe.
2. Drain the chickpeas in a colander and wash them in cold water to remove residues. Option: remove the skin from the chickpeas, the salad will be more beautiful.
3. Wash, peel the onion and cut it into slices or half-moons.
4. Wash the pepper, remove the seeds and chop it.
5. Wash the tomato, cut it into quarters, remove the seeds and cut the quarters into cubes.
6. Pitt the olives (optional), if you bought them pitted and cut into thin slices.
7. Divide the cooked cod into large chips.
8. Place the eggs in a pan, cover with cold water and add a splash of vinegar. Place on high heat and when it boils, lower the heat and cook for 8-10 minutes. Drain and place in cold water to stop cooking and let cool.
9. Wash, dry and finally chop the parsley and set it aside on absorbent paper.
10. If you have chosen to serve the green salad, wash the leaves and place them in a sodium hypochlorite solution.
PREPARATION:
Onions:
1. Heat the oil in a pan and brown the onion and chilli without browning them.
2. Season with vinegar, salt, pepper and paprika.
3. Turn off the heat and set aside.
Cod and chickpea salad:
1. Place the cod flakes, chickpeas, tomato cubes and sliced olives (optional) in a bowl.
2. Add the fried onions and pepper, drizzle the salad with ⅔ of the extra virgin olive oil and mix well.
3. Peel the egg and chop it coarsely.
Green salad (optional):
1. Drain the leaves from the hypochlorite solution.]]
2. Wash in plenty of running water and dry with a vegetable spinner or with absorbent paper.
3. Place in a salad bowl and season with olive oil, salt and pepper.
FINALIZATION AND ASSEMBLY:
1. Arrange the chickpea salad on a serving plate or, if you prefer, divide it between the plates.
2. Spread the chopped egg on top.
3. Decorate with chopped parsley and drizzle with the remaining olive oil.
4. Top with pink pepper (optional).
5. Serve the green salad (optional) separately.
