Super quick and practical recipe: an adapted version of carreteiro rice, under pressure
The traditional recipe, without desalting anything and in just 1 pan.

Ingredients FRESH SAUSAGE AND SMOKED CALABRIO SAUSAGE
– 500 g of pepper sausage, preferably thin, sliced. (or other option of your choice)
– 500 g of smoked pepper sausage, skinless, sliced. (or other option of your choice)
Ingredients CARREEIRO RICE IN PRESSURE
– 200 g of bacon cut into cubes.
– oil to taste, for sautéing.
– 1 unit of onion, chopped.
– 1/2 carrot(s), peeled and grated.
– 2 stalks of celery, chopped.
– 2 cloves of garlic, chopped
– 1 unit of seedless pepper, chopped.
– 2 seedless tomatoes, chopped.
– 2 bay leaves
– 3 cups of rice
– 9 cups of boiling water.
– 1 teaspoon(s) of salt for cooking the rice + a little for seasoning.

Ingredients TO COMPLETE:
– coriander to taste, chopped. (or parsley)
– potatoes with straw to taste
PREPARATION:
- Separate the recipe ingredients and utensils.
- Remove the skin from the smoked pepperoni. Slice/chop the sausages – if desired, keep the fresh sausage whole and do this after frying.
- Wash, chop or grate all the ingredients of the recipe, including the parsley or coriander at the end.
- Wash the tomato, remove the seeds and cut it into cubes. Do the same with the chili pepper.
- Wash the rice under running water (optional).
- Bring a saucepan of water to the boil to cook the rice (see quantities in the ingredients).
PREPARATION:
Light carreteiro rice:
- In a pressure cooker, over medium heat, brown the bacon cubes with a drizzle of oil. Remove and reserve.
- Then add the fresh sausage and brown it well over medium heat, turning it on both sides. Remove from pan.
- Then add the diced smoked sausage, brown it lightly: it is already cooked.
- Remove the smoked sausage from the pan and set aside.
- Slice the fresh sausage, if you did not do so during preparation.
- If necessary, add a little more oil to the pan.
- Add the chopped onion and sauté for 2 minutes.
- Add the celery and carrot and sauté for a few more minutes.
- Reduce the heat to low, add the chopped garlic and chilli and scrape the bottom of the pan well with a spatula to incorporate all the flavours.
- Increase the heat to medium, add the chopped tomatoes and brown them a little more.
- Season with salt and pepper.
- Add the rice and bay leaf to the pan and mix with the vegetables. Brown for 2 or 3 minutes.
- Return the reserved bacon cubes and sausages to the pan.
- Add boiling water (see quantities in the ingredients) and season with salt.
- Cover and let it come under pressure over high heat.
- As soon as it reaches pressure, lower the heat and cook for 3 minutes.
- Turn off the heat, remove the pressure and open the pan: the rice should be cooked and still have broth.
- If necessary, add salt, remove the bay leaf, add the chopped coriander or parsley and mix well.
- Cover and let rest for 2 or 3 minutes.
FINALIZATION AND ASSEMBLY:
- Transfer the carreteiro rice to a plate, or distribute it directly onto plates, preferably deep ones.
- Finish with the straw potatoes on top, without covering all the rice.
