A succulent fish fillet covered in a cassava and chestnut crust, which can be cooked in the air fryer or traditional oven

Fish Fillet Ingredients:
– 2 units of whiting fillets (other option: sea bass fillet) (or yellow hake fillet)
– 1/2 unit of lemon (juice)
– salt to taste
– pepper to taste THE
– olive oil to taste
Farofa (chestnut crust) ingredients:
– 3 tablespoons of cassava flour
– 2 tablespoons coarsely chopped raw unsalted cashews (or baru nuts) (or raw Brazil nuts)
– 25 g cold unsalted butter + a little for greasing if necessary
– salt to taste
PREPARATION:
- Choice of fillets: choose tall fillets so that the crust is proportionate and crunchy.
- Set aside all the ingredients and utensils needed for the recipe. Consider 30 minutes with a 10 minute break if you prepare it in the Airfryer.
- Preparation: If you use a traditional oven, grease a baking tray with olive oil.
- Wash and dry the lemon before extracting the juice.
PREPARATION:
Fish Fillet in Chestnut Crust – Seasoning:
- Arrange the fish fillets on a cutting board, season them with salt and pepper, squeeze the lemon juice over them and distribute them with your hands on both sides so that the entire surface is covered with the seasoning.
- Let it rest while you prepare the chestnut farofa.
Chestnut farofa:
- Coarsely chop the chestnuts.
- Place the cassava flour and chopped chestnuts in a bowl.
- Add the cold butter and, with your hands, mix until you obtain crumbs.
- Season with salt.
Assembly:
- Preheat the oven or fryer to 200°C.
- Brush the fish fillets with olive oil all over the surface.
- If the Airfryer basket is not non-stick, grease it with olive oil. In the case of non-stick baskets this step can be omitted.
- Spread the chestnut crumble evenly over each fillet, pressing gently to secure.
Fish Fillet in Chestnut Crust – Baked:
Airfryer Option:
- Place the fillets in the Airfryer basket, leaving space between them for air circulation. If necessary, cook the fillets in portions to avoid overlapping.
- Place the basket in the preheated airfryer and bake for about 10 minutes, or until the fish is cooked and the crust is golden. Tip: The time may vary depending on the thickness of the threads and the power of the equipment.
Conventional oven option:
- Arrange the fillets on a baking tray greased with olive oil.
- Bake in the preheated oven for about 20 minutes, or until the fish is juicy and the crust is golden. Tip: Pay attention to the fillets during the process to prevent them from drying out.
FINALIZATION AND ASSEMBLY:
- Arrange the chestnut crusted fish fillets on a serving plate or, if you prefer, distribute it directly onto the plates.
- Serve with your favorite side dish. It goes very well with mashed potatoes, roasted potatoes, lemon risotto or a dressed green salad.
