Salmon ingredients:

– 900 g of fresh salmon (fillet)

Pre-repair:

  1. Separate all the ingredients and tools for the recipe.
  2. Salmon fillets can be prepared with the skin or without, according to your preference. To cook, it is recommended to remove the skin.

  1. In a pan, over medium heat, passion fruit juice with honey or brown sugar, mixing with a wire scout so that they are completely incorporated.
  2. Add the seeds and cook until the sauce is reduced to 1/3 of the volume – about 8-10 minutes.
  3. Taste and if you want a sweeter sauce, add more honey or brown sugar, mixing to incorporate.
  4. Turn off the heat and incorporate cold butter, beating the emulsion.
  5. The sauce should have a slightly thick consistency, enough to cover salmon.
  6. Season the salt and set aside.

Preparation of salmon in passion fruit sauce (roast or grilled):

Roast salmon:

  1. Preheat the oven at 200 ° C.
  2. Assign a pan with aluminum and fat sheet with half of the olive oil.
  3. Arrange the fillets on the pan, season with the remaining olive oil and, if desired, add 1 tablespoon of passion fruit juice (for every 2 portions).
  4. Cover with an aluminum sheet and cook for 15 minutes (for a fish at the point).
