Ingredients:

  • 2 tablespoons of oil
  • 1 medium aubergine cut into cubes
  • 1 medium onion cut into thin slices
  • 1 medium red pepper cut into thin strips
  • 1 medium courgette cut into thin slices
  • 1/4 cup vinaigrette dressing
  • 1 can tomato sauce
  • 2 tablespoons of parmesan
  • 1/2 cup grated mozzarella
  • Margarine for greasing

Vinaigrette dressing:

  • 1/3 cup white wine vinegar
  • 1/2 cup (tea) olive oil
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped coriander
  • 1 tablespoon chopped chives
  • 1 teaspoon black pepper
  • 1 teaspoon of salt

Preparation method:

  1. For the vinaigrette dressing, place all the ingredients in a bowl and mix well.
  2. In a large pan, heat the oil, add the aubergines, onion, pepper, courgettes and vinaigrette sauce.
  3. Sauté ingredients over medium-high heat for 6-8 minutes or until vegetables are tender.
  4. Add the tomato sauce and cook for 15 minutes, stirring occasionally.
  5. Place in a greased baking dish and sprinkle with cheese.
  6. Bake in preheated medium oven for 15 minutes or until cheese melts.
