ingredients

  • 4 peeled potatoes
  • 1 tablespoon of oil
  • 5 cups of chicken broth
  • 1 cup of tea cabbage cut into thin strips
  • 1 smoked Calabrian sausage cut into rings
  • Salt to taste

Method of preparation

In the pressure cooker, put the potatoes, oil, chicken broth and salt and bring to medium heat until pressure is reached. Then let it cook for 10 minutes. Transfer the mixture to a blender and blend for 3 minutes. Then put the broth back into the pan, add the peppers, put on medium heat and boil for 6 minutes. Turn off the heat, add the cabbage and mix well. Serve immediately.

Bean soup with noodles and vegetables

ingredients

  • 1 potato cut into cubes
  • 500 g of beans
  • 1 carrot cut into cubes
  • 200 g of penne noodles
  • 1 liter of beef broth water
  • 1 onion
  • Salt to taste
  • 1 drizzle of oil
  • Water to cook the beans

Method of preparation

Put the green beans in a bowl and wash them well under running water. Transfer to a pressure cooker, cover with water and heat over high heat until pressure is reached. Cook for 10 minutes. Then, turn off the heat and wait for all pressure to go away. Drain the water, put the beans in the blender and blend until creamy. Reserve. In a pan, add the oil and heat over medium heat. Add the onion and sauté until golden brown. Pour the reserved beans into the pan and season with salt. Add the pasta, carrots, potatoes and meat broth. Cook until the vegetables are soft. Serve immediately.

  • 2 tablespoons of butter
  • 1 onion, peeled and sliced
  • 1 kg of potatoes, peeled and cut into cubes
  • 200 g of milk cream
  • Salt and ground pepper to taste
  • 1 liter of vegetable broth water

Method of preparation

Put the butter and onion in a pressure cooker and cook over medium heat until golden brown. Add the potatoes and mix well. Add the vegetable broth, cover the pan and cook until pressure is reached. Turn off the heat and wait for the pressure in the pan to release. Then, open the pan, add the milk cream and mix until incorporated. Transfer the mixture to the blender and blend until you get a smooth cream. Put the cream in a bowl, season with salt and pepper and serve immediately.

Tip: serve the cream sprinkled with chopped coriander.
