To enter the publication, the places are evaluated by inspectors who carry out anonymous visits and evaluate the quality of the products, the flavors, the culinary techniques, the personality of the chef in the kitchen, the relationship between quality and price and the consistency between visits. The best rated earn from one to three stars. The green star, in turn, is a category of recognition for sustainable restaurant practices, while those rated Bib Gourmand (the name of the Michelin mascot) are the restaurants with the best value for money.

The International Director of Michelin Guides, Gwendal Poullennec, said this is a unique moment in the history of Istanbul: “With 53 restaurants, including five-star restaurants, our selection reveals the breadth of this talented gastronomic landscape, proud of its identity and its traditions, but also open to the world. “
