Gluten Free Shitake Pancake Recipe:
Preparation time: 1 hour

Difficulty level: easy
Ingredients:
- 8 eggs
- 2 tablespoons of green odor
- Salt and black pepper to taste
- olive oil for greasing
- Light Parmesan and chopped chives for sprinkling
Filling
- 2 tablespoons of oil
- 2 minced garlic cloves
- 250 g of fresh shitake, cleaned and cut into strips
- 2 tablespoons light soy sauce (shoyu)
- salt to taste
Sauce
- 2 tablespoons of oil
- 2 minced garlic cloves
- 4 tomatoes blended in the blender
- 1/2 cup (tea) of water
- salt to taste
Method of preparation:
- Place the eggs, parsley, salt and pepper in a bowl and beat with a hand mixer until aerated.
- Pour 1/4 of the dough into a greased non-stick frying pan and bring to low heat until firm and a pancake is formed.
- Repeat the process with the remaining dough forming 3 more pancakes. Reserve.
- For the filling, heat a frying pan with the oil over medium heat and sauté the garlic and shiitake for 3 minutes.
- Add the soy sauce, season with salt and sauté for 2 minutes. Turn off and reserve.
- For the sauce, heat a pan with the oil and sauté the garlic and onion until wilted.
- Add the tomatoes, water and cook over low heat, stirring occasionally, until reduced and a thick sauce has formed. Salt and turn off the fire.
- Divide the filling between the pancakes, roll them up, arrange them on a plate and drizzle with the sauce.
- Finally, sprinkle with parmesan and chives and serve.
