Ingredients BANANA ICE CREAM WITH TAPIOCA

– 4 very ripe and mashed silver bananas

– 1 cup(s) of coconut milk

– 50 g of grated dry coconut

– vanilla essence to taste (optional)

– 1/4 cup(s) granulated tapioca

Ingredients TO ACCOMPANY

– grinding honey (sugar cane molasses) to taste (optional)

– another of your choice (optional)

PREPARATION:

  1. The riper the bananas, the sweeter the ice cream will be. If necessary, add sugar or sweetener to taste.
  2. Peel the bananas, cut them into slices, place them in a deep plate or bowl and mash them.
  3. Set aside the other ingredients and utensils for the recipe.

PREPARATION:

Banana ice cream with tapioca:

  1. Place the mashed bananas, coconut milk, dry grated coconut and vanilla essence (optional) into a blender or food processor and blend until very creamy.
  2. Then add the tapioca flakes and mix with a spatula.
  3. Transfer the mixture into a container with a lid (which can be placed in the microwave if necessary) and place in the refrigerator for 1 hour to hydrate the tapioca well.
  4. When the tapioca is soft, cover and place in the freezer for 2 hours: this is the ideal time to obtain a firm and creamy consistency for this preparation.
  5. When serving, after further time in the freezer, remove and place in the microwave every 30 seconds until the ice cream is creamy again, but still firm.

FINALIZATION AND ASSEMBLY:

  1. Form into balls and serve banana ice cream with tapioca in cups.
  2. Serve with molasses (mill honey)
