Ingredients BANANA ICE CREAM WITH TAPIOCA
– 4 very ripe and mashed silver bananas
– 1 cup(s) of coconut milk
– 50 g of grated dry coconut
– vanilla essence to taste (optional)
– 1/4 cup(s) granulated tapioca
Ingredients TO ACCOMPANY
– grinding honey (sugar cane molasses) to taste (optional)
– another of your choice (optional)
PREPARATION:
- The riper the bananas, the sweeter the ice cream will be. If necessary, add sugar or sweetener to taste.
- Peel the bananas, cut them into slices, place them in a deep plate or bowl and mash them.
- Set aside the other ingredients and utensils for the recipe.
PREPARATION:
Banana ice cream with tapioca:
- Place the mashed bananas, coconut milk, dry grated coconut and vanilla essence (optional) into a blender or food processor and blend until very creamy.
- Then add the tapioca flakes and mix with a spatula.
- Transfer the mixture into a container with a lid (which can be placed in the microwave if necessary) and place in the refrigerator for 1 hour to hydrate the tapioca well.
- When the tapioca is soft, cover and place in the freezer for 2 hours: this is the ideal time to obtain a firm and creamy consistency for this preparation.
- When serving, after further time in the freezer, remove and place in the microwave every 30 seconds until the ice cream is creamy again, but still firm.
FINALIZATION AND ASSEMBLY:
- Form into balls and serve banana ice cream with tapioca in cups.
- Serve with molasses (mill honey)
