cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
Ingredients for lettuce salad
– 1 bunch of romaine lettuce roughly chopped with your hands (or iceberg lettuce)
– 1 cup(s) parmesan, cut into thin slices
Ingredients for chicken breast
– olive oil to taste (to grease the pan)
– 2 boneless, skinless chicken breasts (½ unit per person)
– 1/2 cup(s) of dry white wine
– Salt to taste
– pepper to taste
Crostini ingredients
– 8 slice(s) of sliced bread, without crust, cut into cubes (or sliced bread without crust)
– olive oil to taste
Caesar dressing ingredients
– 4 pieces of canned anchovy fillets
– 1/2 cup(s) of extra virgin olive oil
– 2 small cloves of garlic, chopped
– 4 tablespoons of lemon juice (or lemon)
– 2 units of eggs, only the yolk
– 1 tablespoon Dijon mustard
– 1 unit of finger-de-moça pepper, seedless, chopped
– Worchestershire sauce to taste (drops)
– Salt to taste
– pepper to taste
Ingredients for decorating
– chili pepper to taste (optional)
PREPARATION:
1. Separate all the ingredients and utensils for the recipe.
2. In a bowl, season the chicken breast with salt and pepper and let it marinate for at least 15 minutes.
3. Prepare the croutons (see preparation).
4. Wash the lettuce leaves and soak them in a bowl with sodium hypochlorite solution.
5. For the sauce, peel and chop the garlic, wash it, remove the seeds and chop the chilli pepper.
PREPARATION:
Crostini (this step must be done before continuing the pre-preparation):
1. Remove the crust and cut the bread slices into cubes.
2. Heat a non-stick pan with a drizzle of olive oil and toast the bread cubes over low heat, turning them so that they are golden and crunchy all over the surface. (be careful not to burn). Remove the croutons from the pan and set them aside.
3. Continue pre-preparation.
Caesar Sauce:
1. In a bowl, crumble the anchovy fillets in a little olive oil with a fork.
2. Transfer to a blender or leave in a bowl to blend with a mixer.
3. Add the garlic, lemon juice, egg yolk, mustard and black pepper and beat until smooth.
4. Gradually add the remaining olive oil (drizzle) and beat until creamy.
5. Season with Worcestershire sauce (drips), salt and pepper.
6. Set aside.
Chicken breast:
1. Heat a non-stick pan (if you prefer, use the same pan in which you prepared the croutons) with a drizzle of olive oil.
2. Add the chicken breast and reduce the heat to low.
3. Grill, turning constantly, until the meat is cooked through and the top is browned, about 15 minutes.
4. Pour in the wine, raise the heat to maximum and let it evaporate.
5. Remove the chicken from the pan, wrap it in aluminum foil and set aside.
APPETITE OR DESSERT (optional):
If you have chosen to prepare an appetizer or dessert, take advantage of this break to prepare.
Lettuce salad:
1. Cut the Parmesan cheese into thin slices with a mandolin or use a potato peeler to make the operation easier.
2. Remove the lettuce leaves from the sodium hypochlorite solution. Wash under running water and spin.
3. Tear the leaves with your hands, place them in a bowl and season them with half the Caesar dressing and mix gently.
FINALIZATION AND ASSEMBLY:
1. On a cutting board, cut the chicken breast into diagonal slices.
2. Arrange the chicken breast slices on one side of a serving plate or, if you prefer, divide them among the plates.
3. Place the salad next to the chicken
4. Drizzle the chicken with the remaining sauce and garnish with the peppers (optional).
5. Spread the parmesan slices over the dressed lettuce.
6. Finally distribute the croutons on the salad.
