Place the water, coconut milk and sugar in a blender and blend until creamy. Add the lemon juice and beat again to combine. Then distribute the mousse into the bowls, cover with cling film and place in the refrigerator until it has firmed up. Sprinkle with lemon zest and serve immediately.
Chocolate cake

- 6 eggs
- 400ml coconut milk
- 1 cup of sugar
- 1/2 cup cocoa powder
- 1 pinch of salt
- 1 teaspoon vanilla essence
Syrup
- 1/2 cup sugar
- 2 tablespoons of cocoa 100% powder
- 1/4 cup water
Preparation method
Place all the syrup ingredients in a pan and mix well. Place over medium heat to cook for 5 minutes. Turn off the heat, pour the syrup into a pudding mold and spread it on the sides. Reserve. Place all the brigadeirão ingredients in a blender and blend until you obtain a smooth consistency. Place the mixture in the mold with the syrup and, in a bain-marie, cook in a preheated oven at 160°C for 45 minutes. Then turn off the oven, wait for it to cool and place in the refrigerator for 2 hours. Unmold carefully and serve immediately.
Papaya Cream
ingredients
- 400 ml of soy milk
- Pulp of 5 papayas
- Pulp of 1 passion fruit
- 1 teaspoon of sugar
Preparation method
Place the soy milk, papaya and passion fruit in a blender and blend until creamy. Add the sugar and beat again to mix it with the other ingredients. Then distribute the cream into the bowls and place in the refrigerator for 1 hour. Serve immediately.
Raspberry panna cotta
ingredients
- 600ml coconut milk
- 80 g of sugar
- 2 tablespoons vanilla essence
- 10 g unflavoured powdered gelatine
- 15 g of raspberry frozen

Preparation method
In a container, dissolve the gelatine according to the instructions on the package. Reserve. Place the coconut milk, 50 g of sugar and vanilla essence in a pan and cook over medium heat until boiling. Lower the heat, add the gelatine and mix well. Turn off the heat and distribute the mixture into the containers. Wait for it to cool and place it in the fridge until it hardens.
Meanwhile, in a pan, add the raspberries and the rest of the sugar and cook over medium heat until syrupy. Turn off the heat, wait for it to cool, remove the panna cottas from the fridge and pour the syrup over them. Serve immediately.

Custard

- 5 eggs
- 200 ml of milk almonds
- 100g grated coconut
- 1 tablespoon coconut oil
- Ground cinnamon to taste
- Coconut oil for greasing
- Sugar for dusting
Preparation method
Place all the ingredients, except the sugar, in the blender and blend for 10 minutes. Reserve. Grease the molds with coconut oil and sprinkle with sugar. Pour the dough over the top, cover with aluminum foil and, in a bain-marie, cook in a preheated oven at low temperature for 50 minutes. Then remove the aluminum foil and cook for another 20 minutes. Turn off the oven, wait for it to cool and put it in the fridge to harden. Unmold carefully and serve immediately.
Chocolate truffle

- 3 tablespoons cocoa powder
- 200 ml of water
- 2 tablespoons of liqueur orange
- 1 cup of sugar
- 4 egg yolks, sifted
- 1 cup soy extract powder
- Cocoa powder for sprinkling
- Coconut oil for greasing
Preparation method
Place the water, soy extract, egg yolks, sugar and cocoa in a blender and blend until you obtain a smooth consistency. Then transfer the mixture to a pan and heat over medium heat until boiling, stirring constantly. Reduce the heat and cook for another 5 minutes. Turn off the heat, add the orange liqueur and mix well.
Grease a plate with coconut oil and place the mixture on it. Cover with cling film and refrigerate for 30 minutes. Then remove it from the fridge and, with the help of a spoon, take some dough, form a ball and sprinkle it with cocoa powder. Repeat the operation with all the dough and then serve.
Sweet rice
ingredients
- 1 cup of tea rice
- 2 cups oat milk
- 3 teacups of water
- 250ml coconut milk
- 4 cinnamon sticks
- 1 pinch of salt
- Sugar to taste
Preparation method
Place the rice, cinnamon, salt and water in a pan and cook over medium heat until the grains are soft. Add the sugar, oat milk and coconut milk and stir to combine. Cook until you obtain a creamy consistency. Turn off the heat and serve immediately.
Pudding

- 6 egg sieved
- 400ml coconut milk
- 1 1/2 cups sugar
- 1 pinch of salt
- 1 cup brown sugar
- 1/4 cup hot water
- 2 tablespoons cornstarch
Preparation method
In a pudding mold, add brown sugar and heat over medium heat until melted. Add water, mix well and cook until syrup. Turn off the heat, spread the syrup over the pan and set aside. Place the eggs, coconut milk, sugar, salt and cornstarch in a blender and blend for 5 minutes. Then pour the mixture onto the mold with the syrup and, in a bain-marie, place in a preheated oven at 180°C for 1 hour. Turn off the heat, wait for it to cool and place in the refrigerator for 4 hours. Remove from the refrigerator, carefully unmold and serve immediately.
